Vanilla Lemon Salad Dressing

I found this recipe while I was living in Pittsburgh. A group of friends got together monthly for a cooking club. We had themes or ingredients we had to use for each cooking club. This one was vanilla and I was serving the salad portion of the meal. I found this recipe online and have been making it ever since. Simply wonderful. Here is the original recipe. I have increased the amounts so that it makes more at one time. If you want to make less, then go to the original recipe. Enjoy.

Ingredients

1/4 cup + 2 tablespoons (or 6 tablespoons) lemon juice

1/2 cup olive oil

2 teaspoons vanilla bean paste

1 tablespoon + 1 teaspoon brown sugar

Directions

Put lemon juice, olive oil, vanilla bean paste and brown sugar in a container with a lid, like a mason jar.

Shake and pour over salad. Also great as a marinade for chicken and great on green beans.
