Bean Salsa

This is a party favorite. It makes a lot but it is usually eaten right away. It can also be frozen in portions. Here is the original recipe but I added several things.

Ingredients

1 (15 ounce) can black-eyed peas, rinsed and drained

1 (15 ounce) can black beans, rinsed and drained

1-2 cups organic corn

1/2 cup chopped onion (I like to use half red and half white)

1 chopped green bell pepper

1/4 cup canned sliced green chilis (change this to jalapeño peppers if you like more spice)

1 (14.5 ounce) canned diced tomatoes, drained (can also use fresh tomato)

2 tablespoons lime juice

1/4 cup olive oil

1/4 cup chopped fresh cilantro

1/2 teaspoon minced garlic

Directions

In a medium bowl, combine all ingredients. It is best if you make it the day before and refrigerate overnight to blend the flavors.
